HARVESTING

We harvest all our grapes by hand, in crates, carefully selecting only the best bunches.

DE-STEMING

MANUAL or soft destemming applied with rubber rollers:

Reducing the breakage of the grape seeds: avoiding the release of bitter or astringent tannins, which could compromise the final taste of the wine.

Minimizing stress on the skins: rubber rollers preserve the integrity of the skins, improving the extraction of aromas and color during fermentation.

Maintaining a better quality of the must: gentle destemming allows for a must less contaminated by unwanted compounds, favoring a purer and more aromatic wine.

FERMENTATION

All our wines ferment spontaneously without any chemical-physical aid. We do not add selected yeasts or indigenous yeasts.


PRESSING

We gently press our grapes, without stressing them, in order to obtain better quality musts.

REFINEMENT

We age all our wines in fiberglass or stainless steel tanks, decanting naturally without any temperature control. We never leave them alone.
